Upon entering, guests are welcomed with a refreshing Mojito, classic Caipirinha, or tropical Piña Colada infused with a modern twist, the perfect sip to start the night. Then the culinary journey begins with Waterside’s carefully curated buffet, led by Chef Sherwin Reyes, whose passion for Latin flavors brings each dish to life. Guests can start with a variety of appetizers such as Seabass Tiradillo, a dish inspired by the coastal traditions of Latin America, where fresh fish is lightly cured with citrus and herbs, evoking freshness, vitality, and the abundance of the sea. Complementing this are charcuterie selections of Bresaola, Salami Milano, and Prosciutto, paired with artisanal cheeses including creamy Gorgonzola, nutty Parmesan, and smooth Brie.
The evening unfolds with interactive highlights, including a roving nachos trolley serving freshly made guacamole, setting a playful prelude to the main courses. Guests can savor hearty Latin-American specialties and premium roasted meats, from Bourbon Barbecue Pork Ribs and Chimichurri Chicken to Herb-Crusted Lamb Rack and Salt-Crusted Baked Salmon. Signature Latin dishes such as Pastel De Fideo, the traditional Andean corn delicacy ‘Humintas’, and Arroz Con Queso which is a creamy, cheesy rice dish celebrated across the Andes for its simplicity and heartwarming flavor, showcase the region’s vibrant flavors and culinary traditions.
