Sicilian Roast @ 10: New Molito Branch, New Menu, Same Soul

Sicilian Roast just hit a major milestone: ten years of serving Italian comfort food in Manila. And to celebrate, the brand is leveling up with a revamped menu and the opening of its newest branch at Molito Lifestyle Center in Alabang.

What started back in 2015 as a cozy pizza-and-pasta spot in Makati’s Legazpi Village has now grown into four branches across Metro Manila: Makati, San Juan, Quezon City, and now Alabang. Over the years, Sicilian Roast has built a loyal following by keeping things simple—warm vibes, generous servings, and food that feels like home.

The People Behind the Flavor

CEO Lorenzo Vega sums it up best: “We’ve always believed in serving honest food with soul and warmth. Ten years in, it’s still that passion that fuels us.”

Helping drive that passion is Executive Chef Matt Navarro. With nearly two decades of experience in New York neighborhood gems and five-star hotels worldwide, Navarro brings a mix of fine-dining polish and casual comfort to the table. His approach? Keep the roots of Italian cooking intact, but add modern techniques and a sharper focus on ingredients.

What’s New on the Menu

The Molito branch isn’t just about a new location—it’s about a refreshed food experience. Expect:

  • A fine-tuned pasta lineup that balances tradition with creativity.
  • An expanded steak menu, including premium cuts.
  • A newly engineered pizza dough that’s lighter but still hearty.

One standout dish is the Bottarga alla Carmen, angel hair pasta tossed with cured fish roe.

 

It’s a tribute to Vega’s late mother, Maria del Carmen Vega, whose love for simple flavors and Aperol Spritz inspired both the dish and a signature cocktail in her name.

A mural at Molito also honors Vega’s mother and father, symbolizing the family spirit that anchors the brand.

Premium Partnerships

Sicilian Roast is also flexing its ingredient game. Through a partnership with Prime Cuts by Doubleday, the restaurant is certified to serve Ito Ranch Matsusaka Beef—Japan’s legendary “Queen of Wagyu.” It’s a rare offering in the Philippines and a clear sign of the brand’s commitment to quality.

The Experience

At the media preview, guests got first dibs on the revamped menu, paired with drinks from the updated bar program. The vibe?
